Hi Friends!

I want to share with you one of my favorite things to eat. It’s not healthy. It’s not gourmet. It’s just simply DELICIOUS. We’ve got Mac and Cheese with three types of cheese, loads of bacon, topped with Flaming Hot Cheetos. My goodness just talking about it makes me hungry!

This is the epitome of comfort food in my opinion. It’s the type of food you crave when you’ve had a long week and just wanna make something easy and fun. This recipe makes 8-10 servings and I guarantee you wont have much left over if you make it for your friends or family. My friends always tell me this is one of their favorite dishes to make with their kids. It incorporates one of their favorite snacks and it’s easy enough for them to help out with.

Even if you aren’t a huge fan of Hot Cheetos, you can make this without them (which would be a sin because everyone loves Hot Cheetos!). You can even substitute regular Cheetos if making for kids. I don’t know if it’s just me but I grew up eating Hot Cheetos all the time! They have the perfect amount of crunch and leave this yummy residue on your fingers that begs you to lick it off when you’re done. I don’t care if they stain my shirt or my fingers. When you love something that much you can look past the small things haha ok I’m done talking about my love for Hot Cheetos! I  know you fellow Hot Cheetos lovers know what I’m sayin.

But for real though, I love a good, old fashion baked Mac and Cheese. It’s so tasty coming out of the oven and even heated up the following day. I’m a big fan of leftovers since I like to take my lunch to work. It just gets to be too expensive going out to eat so I make big dishes like this at least once or twice a week to spare myself the extra time and money of cooking.

Did I mention this dish has oodles of yummy bacon?? Well it does. Lots and lots of bacon. If you haven’t read most of my post, you’ll soon find a theme and that theme is bacon. You can eat bacon for breakfast, lunch and dinner and I’m telling you right now I sometimes WILL eat bacon for all three meals. It’s something that is always in my fridge and I find myself adding it to every dish. My favorite way to cook bacon is to bake it in the oven. The texture is simply perfect and it’s not as greasy when cooked in the oven. Plus I hate get splattered in the face, arms, or anywhere for that matter when I  make bacon on the stove. So here’s what I do. I preheat the oven to 400*F and line a baking sheet with foil. I lay the bacon out the long way which usually fits 6 pieces or so. Next I generously apply black pepper and sometimes cayenne because it’s my favorite spice EVER. I bake it for 8-9 minutes on each side and pat it dry with some paper towels then go to town.
